The recipes that you can use to prepare this dish differ from one country to another, even from one housewife to another, so the scope for creativity and change in this recipe is wide and large. stuffed zucchini

the ingredients

  • Two sacks of zucchini.
  • One kilogram of small eggplant.
  • Two medium-sized sweet red peppers.

For the filling:

  • Two cups of Egyptian rice.
  • Half a kilogram of finely minced meat.
  • Two teaspoons of tomato puree.
  • A teaspoon of crushed garlic.
  • A teaspoon of dried mint.
  • A tablespoon of salt.
  • Half a teaspoon of ground cinnamon.
  • Three tablespoons of oil.

For broth:

  • Ten cloves of garlic.
  • Two cubes of chicken broth.
  • A teaspoon of dried mint.
  • A teaspoon of lemon juice.
  • Small spoon of salt.
  • Three tablespoons of tomato puree.

How to prepare

  • Remove the zucchini, eggplant and sweet pepper pods, then rinse and drain the water.
  • Fry the meat with a little oil, salt, black pepper and a small pinch of sugar, then remove from the heat.
  • Wash the rice and put it in a bowl and add garlic, spices and meat.
  • Stuff each zucchini, eggplant, and sweet pepper to three quarters, then close the opening with a piece of tomato chopped into cubes.
  • Put the stuffing in the pot, then add the chicken cube, salt, mint, lemon juice, salt, water and garlic.
  • Put the pot over a medium heat, then reduce the heat and cook the zucchini for forty-five minutes, or until the zucchini is cooked.

Iraqi Mahshi (Dolma)

the ingredients

  • The same ingredients as the filling mentioned in the previous recipe.
  • Four small white onions, oval in shape.
  • Five hundred grams of boiled grape leaves.

How to prepare

  • Peel the onion, then chop it on one side and continue peeling the onion core without cutting it completely.
  • Mix all the filling ingredients, then stuff the grape leaves and onions and roll it into a cylindrical shape.
  • Arrange grape leaves in the pot, then put the stuffed onions in the middle, cover the pot with water with a pinch of salt and two tablespoons of lemon juice over a high heat.
  • Reduce the heat when the water boils, and continue cooking the dolma until the vine leaves are tender and the onions are soft.
