  • A teaspoon of cardamom.

How to prepare

  • Put the butter, oil and cream in the mixer bowl, install the paddle attachment and run the mixer on medium speed for two minutes, add an egg and run on medium speed until it disappears completely, add the second egg and run on medium speed until it disappears completely.
  • Add the vanilla, remove the paddle attachment, install the dough hook, add sugar, six cups of flour, baking powder, yeast, salt, and milk.
  • Run the mixer on medium speed until the dough forms and separates from the edges of the bowl, and gradually add the rest of the flour if the dough is soft.
  • Put the dates, anise, fennel, butter and cardamom in a deep dish, stir the dates with the rest of the ingredients until well mixed, and form the dates into small balls the size of a hazelnut.
  • Install the net rack in the center of the oven and preheat the oven to a temperature of 180°C.
  • Bring small decorated cupcake molds.
  • Take an amount of the maamoul dough about the size of a walnut, put a ball of date filling in the center of the dough, close the dough on the dates and form it into a ball, put the ball in the mold and press it lightly to take the shape of the decoration, and complete the formation of the rest of the dough and its filling.
  • Dates maamoul bread for 15 minutes.
  • Sprinkle the fine sugar over the maamoul while it is still warm, through a fine-grown sieve.

How to prepare

How to prepare

  • Put semolina, mastic, yeast, and sugar in the mixer bowl, install the stirring paddle and run on medium speed until the materials mix, then add butter, rose water, and blossom water, and run the mixer on medium speed to get the dough.
  • Put the dough in an oiled dish, cover the dough with a piece of nylon and put it in a warm place for about an hour.
  • Put the water, sugar, milk, blossom water, and starch in a medium thick-bottomed saucepan, and using a manual netting paddle, stir the materials until the starch is dissolved, and put the saucepan over a medium heat and stir with the wooden spoon.
  • Get a high-edge mold and line it with a piece of parchment paper.
  • Put half the amount of dough between two pieces of parchment paper, and using a rolling pin, stretch the dough into a square the same size as the mold, put the dough in the bottom of the mold and press with fingertips until the bottom is completely covered.
  • Distribute the cream on the dough layer.
  • Extend the rest of the dough into a square of the same size and place on top of the cream layer.
  • Put the mold in the oven for 30-35 minutes.
  • Take out the maamoul from the oven, and distribute a large amount of ground pistachios on it.
  • Remove the maamoul from the mold and using a sharp knife cut it into squares as desired and serve.
