Soaking Sauce Ingredients:

How to prepare

  • Put each piece of feather between two butter paper, hammer it several times until it becomes thin, and set it aside, and repeat the same step with all the feathers.

Prepare the soaking mixture:

  • Put the lemon juice, olive oil, garlic and vinegar in a large bowl, and stir well until the ingredients are mixed together.
  • Dip the feathers in it for ten minutes, stirring them several times during this period to absorb the flavor well.
  • Heat an oven grill, grill pan, or an electric grill.

Prepare the spice mixture:

  • Prepare the spice mixture by mixing the chili, paprika, cinnamon, ginger, cardamom, coriander, cumin, garlic and pepper together, and stir the ingredients until well combined.
  • Take each piece of lamb chops and dip them in the spice mixture until completely covered on both sides with a light layer of spices, and repeat the same step with the rest of the feathers.
  • Put the feathers on a grill and grill for ten minutes, flipping them several times during the grilling process until they are completely cooked, and serve them immediately with the boiled vegetables.

Kofta, cabbage and carrot soup

  • One to two tablespoons of olive oil.
  • A small onion, finely chopped.
  • A large piece of shredded carrots.
  • Two cups of finely chopped cabbage.
  • Two tablespoons of finely chopped parsley.
  • Four cups of chicken or beef broth.

How to prepare

  • Put the cumin, flour and coriander in a wide dish, and stir well until the ingredients are mixed together.
  • Form the kofta into small balls about two centimeters in size, then roll the balls with flour until they are coated in a thin layer.
  • Put the olive oil in a wide saucepan and raise it over a medium heat, add the kofta balls to it, wait a few seconds until they turn red, and turn them from all sides until they turn golden.
  • Take out the kofta balls and put them on a side dish, and set them aside.
  • Put the cabbage, garlic and onions in the same pot, and stir well until the ingredients wilt.
  • Add the broth to the pot, then return the kofta to it, leave the soup until it boils, then reduce the heat to the bottom of the pot and leave the soup to cook for about ten minutes until it is completely cooked.
  • Add more broth to make the soup less thick – as desired.
  • Pour the soup into serving dishes, sprinkle with parsley, and serve immediately.
