Meals in the month of Ramadan are divided into two parts: iftar and suhoor, and spells abound in this holy month, where housewives start preparing the most delicious Ramadan dishes, especially those containing chicken, meat, fish, and pastries in addition to soups and sweets. Which are commonly prepared in Ramadan, such as: Basbousa, Qatayef, Kunafa, Cake, Jelly, Cupcake and many others. In this article, we will talk about how to prepare chicken rice, chicken potato soup, and Qatayef.

Chicken rice

the components:

  • Four chicken breasts, cut into cubes.
  • Onion finely chopped.
  • A clove of crushed garlic.
  • Two cups of liquid chicken broth.
  • Black pepper to taste.
  • Lemon juice.
  • Two tablespoons of chopped green coriander.
  • Two tablespoons of olive oil.
  • 1 cup of washed, drained rice.

How to prepare:

  • Heat the olive oil in a saucepan, add the onions to it and stir until it wilts.
  • Add garlic, stir a little.
  • Put the chicken pieces, and stir the ingredients until they are cooked, and their color becomes golden.
  • Make a hole in the pot, add the rice, then stir for 2 minutes.
  • Flavor it with a little black pepper.
  • Pour the chicken broth, and stir well.
  • Leave the ingredients to boil, then reduce the heat and close the pot for fifteen minutes, until the rice grains are cooked.
  • Pour the lemon juice, and add the chopped green coriander.
  • Mix a little with a small spoon, and apply the dish.

Chicken Potato Soup

the components:

  • Five hundred grams of chicken, cut into cubes.
  • Two medium-sized potatoes, cut into cubes.
  • A liter of chicken broth.
  • A tablespoon of crushed garlic.
  • Two tablespoons of olive oil.
  • A quarter of a teaspoon of saffron.
  • Salt, to taste.
  • Black pepper to taste.
  • A teaspoon of grated lemon peel.
  • Two tablespoons of lemon juice.

How to prepare:

  • Heat the oil in a saucepan over a medium heat, then fry the chicken with salt and black pepper.
  • Add garlic, stir well, then remove the chicken from the heat, and set it aside on a plate.
  • In the same pot, pour the broth, lemon peel, black pepper, saffron, and potato cubes.
  • Cover the pot, let its contents boil, then reduce the heat and leave it for an additional five minutes.
  • Return the chicken to the pot, and let the mixture boil again.
  • Remove the pot from the heat, and pour the lemon juice over it.

Qatayef

the components:

  • One and a half cups of flour.
  • Half a teaspoon of yeast.
  • Half a teaspoon of baking powder.
  • Half a teaspoon of sugar.
  • One and three quarters of a cup of milk.
  • Butter, as needed.
  • Ready cream, as needed.
  • Qatar ready, as needed.

How to prepare:

  • Put the flour, yeast, baking powder, sugar and milk in a deep bowl.
  • We stir the ingredients well until we get a homogeneous mixture, and a little thick.
  • Cover the bowl, then leave it for an hour until the mixture ferments.
  • Grease a frying pan with a little butter, then pour two teaspoons in the middle.
  • Leave the dough until bubbles appear on its face, then turn it over to the other side until its color becomes golden.
  • We repeat the steps until we run out of the quantity, then leave the dough aside to cool.
  • Put a little ready-made cream in the center of each dough, then close the edges of the dough until we get the shape of discs.
  • Heat a large amount of oil on the fire, and put the katayef discs, then stir them well until they turn red.
  • Remove the Qatayef from the oil, dip it in the prepared syrup, then serve it.
