Qatayef is one of the very old and famous sweets as a main dish in the blessed month of Ramadan. It is prepared on a daily basis after breakfast. It is usually bought ready-made from bakeries. It can be prepared at home. Without frying or grilling it.

Qatayef Asafiri

Qatayef dough ingredients

  • Two cups of white flour.
  • Half a cup of fine semolina (farkha).
  • Three teaspoons of baking powder.
  • Three cups of water.

Chocolate filling ingredients

  • Two hundred grams of dark chocolate.
  • A cup of cream or curd.
  • A teaspoon of honey.
  • A teaspoon of liquid vanilla.
  • Three tablespoons of crushed hazelnuts.

How to prepare

  • Put the flour, semolina, baking powder and water in the electric mixer and beat the ingredients on a medium speed until the dough is homogeneous and becomes liquid and smooth without lumps, then let it rest for a quarter of an hour.
  • In the meantime, we prepare the filling in a deep, thick-bottomed saucepan, where we begin to put the cream in it, then put it on a medium heat until the cream melts and heats up, then add the chocolate, stir it well with the cream, add the liquid vanilla and honey, and stir the sauce on a very low heat until the sauce mixes. And it becomes a soft creamy texture, then we remove it from the heat and leave it until it cools.
  • In preparing the Qatayef Al Asafiri, we use a saucepan or a non-stick pan, and prepare a wide plate in which to put the Qatayef after its maturity.
  • Put the pan on a medium heat and let it heat up well.
  • We start by pouring the Qatayef dough onto the hot frying pan, so that it is in the form of small, round discs, and should be of regular shape.
  • We leave the Qatayef pieces in the pan until bubbles form on the face of the dough and it has dried completely, and this indicates that the dough from the bottom has matured.
  • We use a simplified spoon and raise the Qatayef kernels and place them on the plate over the towel.
  • We start stuffing the Qatayef after it cools down. We take the Qatayef disk and close it in half to form a funnel. We take a teaspoon of chocolate sauce and stuff it with the Qatayef and dip it in the crushed hazelnuts.
  • We serve the Qatayef cold.

Qatayef bird with cream

  • Half a kilo of birdseed Qatayef (prepared in the previous method).
  • One and a half cups of whole milk.
  • A cup of liquid cream.
  • A quarter of a cup of white flour.
  • A quarter of a cup of starch.
  • Three tablespoons of sugar.
  • big spoon of flowers water.

How to prepare

  • We prepare the cream in a thick-bottomed saucepan, put the milk, liquid cream, sugar, and starch in it and beat the ingredients using the hand mixer until the ingredients are homogeneous and there is no lump of starch left.
  • We put the pot on the fire, and the fire should be of medium heat, and stir the mixture continuously using a wooden spoon until the mixture boils and begins to thicken, and its texture becomes like a pudding.
  • Remove the cream from the heat and put it in a wide dish until it cools.
  • We take the katayef and form it in the form of cones, stuff it with cream, distribute the syrup on it using a spoon, and decorate it with pistachios.
