Kofta Ingredients:

  • A kilogram of minced meat.
  • A cup of parsley.
  • A quarter of a cup of mint.
  • Three grains of tomatoes.
  • Two pods of green pepper.
  • Two onions.
  • Four cloves of garlic.
  • One and a half teaspoons of salt.
  • A teaspoon of mixed spice.
  • Half a teaspoon of black pepper.

Broth Ingredients:

  • a glass of water.
  • Half a cup of lemon juice.
  • A clove of garlic.
  • Two tablespoons of pomegranate molasses.
  • Half a teaspoon of cardamom.
  • Half a teaspoon of mixed spice.
  • Pine for serving.

How to prepare

  • Mix all the kofta ingredients together well except for the tomatoes, then cut the kofta into fingers, and put them in the oven tray next to each other, in a circular motion.
  • Cut the tomatoes in half, then cut each half into slices, to get semi-circular slices.
  • Put the tomato slices between the kofta fingers, so that they are attached to them, and make the cut part of the tomato facing down.
  • Mix all the broth ingredients together, then distribute the mixture over the kofta.
  • Run the oven at a temperature of one hundred and eighty degrees Celsius, and install the middle grid rack.
  • Place the kofta in the oven for an hour, until it is soft and browned.
  • Take the kofta out of the oven, distribute the pine nuts over it, and serve it with rice or bread.

Grilled Meat Balls

  • Four hundred and fifty grams of ground beef.
  • One and a half cups of grated onion.
  • Roasted red onion.
  • Three cloves of garlic, finely chopped.
  • Tomatoes cut into slices.
  • Red, yellow and green bell peppers.

  • 1 tablespoon of chopped fresh thyme.
  • A teaspoon of ground black pepper.
  • Half a teaspoon of salt.
  • Six loaves of Arabic bread.

Yogurt Sauce Ingredients:

  • Four cups of yoghurt, filtered.
  • ¼ cup chopped fresh mint.
  • A clove of minced garlic.
  • Three tablespoons of olive oil.
  • A tablespoon of lemon juice.
  • Black pepper, salt.

How to prepare

Prepare the yogurt sauce:

  • Place the coffee purifier in the bottom of the filter, then place the filter on top of a bowl.
  • Chamber the milk in the refinery, and put it in the refrigerator for a period of four to six hours, to get rid of the excess water, and to obtain approximately two cups of filtered milk.
  • Mix yogurt, mint, garlic, lemon juice and olive oil together, season the mixture with black pepper and salt, then cover, and put in the refrigerator.

Preparing the meatballs:

  • Mix the meat, tomatoes, colored peppers, eggs, onions, garlic, thyme, black pepper and salt together, to obtain a cohesive mixture.
  • Form the meat mixture into small balls, grease wooden skewers with oil, and then insert the meatballs in it.
  • Grease the balls with olive oil, then sprinkle them with salt, then set the grill to direct heating, then put the skewers in it until the balls are cooked.
  • Lift the skewers from the grill, pull the meatballs out of them, put them on top of the bread, put the yogurt sauce and the green salad on top of the balls, then wrap the bread on the meat.

Beef steak with basil sauce

  • Six pieces of thick steak.
  • A quarter cup of each: Parmesan cheese, balsamic vinegar, olive oil.
  • Four cloves of crushed garlic.
  • One teaspoon each: oregano, crushed chili, salt.
  • Half a teaspoon of black pepper.

Basil Sauce Ingredients:

  • Two cups of basil leaves.
  • Half a cup of pine nuts.
  • Three cloves of garlic.
  • Small spoon of salt.
  • Three and a half tablespoons of olive oil.

How to prepare

  • Mix garlic, oregano, chili, vinegar, oil, black pepper and salt together, to get a sauce.
  • Distribute the sauce over the steaks, cover the slices, and put them in the refrigerator for several hours.
  • Turn on the oven grill, prepare a tray with a net, put the slices on the net, and roast them for a quarter of an hour to twenty minutes until they are cooked.
  • Remove the slices from the oven, cover them with aluminum foil, and set them aside.

Prepare the basil sauce:

  • Mix the sauce ingredients except for the oil in a food processor, to get a smooth sauce, then gradually add the oil, until it mixes with the basil.
  • Put the steak in a serving dish, and distribute a tablespoon of basil sauce over each slice of meat, then distribute the cheese on top.
  • Serve steak with sauteed vegetables.
