Konafa is one of the very famous sweets in the Arab world, and the word “Kanafa” is “Chenafa”, a word of Circassian origin. It is served on all occasions and feasts. The dough is prepared from vermicelli and chicken flour. There are different types of kunafa, including the soft kunafa, the rough kunafa, the mabroum kunafa and the confusing kunafa, and there are various types of kunafa.   • A kilo of kunafa dough.
  • A cup of melted ghee.
  • A cup of raisins.
  • A cup of shredded coconut.
  • Nuts as desired.
  • Half a teaspoon of the color of kunafa dough.
  • Two cups of liquid milk.
  • A teaspoon of vanilla.
  • Three tablespoons of starch.

How to prepare

  • First we prepare the syrup by putting the amount of sugar and water in a pot on the fire and stir until the sugar dissolves completely, then leave it until it boils, then add lemon juice, cinnamon sticks, and leave it until it becomes thick, we put it in the refrigerator until it cools completely before use.
  • Prepare the pudding by placing liquid milk and vanilla in a pot on a low heat, then dissolve the amount of starch in a little water and add it to the milk with continuous stirring, then leave it on the fire to boil until it becomes thick.
  • Place the pudding in the refrigerator until completely cooled until use.
  • Put the kunafa dough in the food processor and chop it until it becomes smooth.
  • Put the ghee on the fire until it melts completely, then add the food color to it and stir a little.
  • Add the ghee to the kunafa and rub it by hand until the ghee is well distributed.
  • Divide the amount of kunafa dough into two parts and put the first part in the tray to be baked in and arrange it well while patting it with the palm of the hand.
  • We add the cold pudding to the first layer of kunafa and spread it well, and some ghee can be used so that the pudding does not stick to the hand while it is spread, taking into account that the pudding does not reach the edges so that it does not burn while baking.
  • Spread the coconut, raisins, and the nuts we like on top of the pudding layer.
  • Distribute the rest of the amount of kunafa over the pudding and spread it well and quietly, pressing it lightly with the palm of the hand to flatten the surface.
  • We put the konafa tray in the oven until it is cooked, then we brown it from the face as well.
  • Take it out of the oven, then spread the cold syrup over it completely.
  • Cut and serve hot.
