Maamoul

Maamoul is considered one of the most popular desserts that have received great demand from many people, whether they are young or old, as it is made and served on various occasions, especially holidays.

Maamoul with semolina

the ingredients

Ingredients for the semolina maamoul dough

  • kilogram of semolina.
  • A quarter of a tablespoon of ground mahlab.
  • Half a tablespoon of cake seasoning.
  • Half a teaspoon of baking powder.
  • Half a tablespoon of yeast.
  • A quarter of a tablespoon of Arabic mastic.
  • a tablespoon of sugar.
  • 100 grams of oil.
  • 100 grams of ghee.
  • 25 grams of anise.

walnut filling

  • 100 grams of chopped walnuts.
  • A quarter of a cup of coconut.
  • Half a tablespoon of cinnamon.
  • a tablespoon of sugar.
  • Mix these ingredients together well.

Pistachio filling

  • 100 grams of chopped pistachios.
  • Two tablespoons of syrup.
  • Half a tablespoon of blossom water.
  • Mix all these ingredients until smooth.

Ajwa filling

  • kilograms of dates.
  • A quarter of a tablespoon of nutmeg.
  • A quarter of a tablespoon of ground cinnamon.
  • A quarter cup of olive oil.
  • Mix these ingredients well in a bowl and make small balls out of them.

How to prepare

  • We put the required amount of semolina in a bowl, then put the Arabic mastic, sugar, ground mahlab, and maamoul spice and mix them all.
  • Put the required amount of ghee and oil on the semolina, mix well, and leave the bowl covered for 24 hours.
  • Put the water and anise on the fire until it boils.
  • We bring a bowl of semolina and put both yeast and baking powder on it, and then start pouring warm anise on it, and knead it well until the dough holds together.
  • We cut the dough into medium-sized pieces, and stuff it with the filling we want, and it is made in different forms either by scraping with maamoul tools or special maamoul molds, and put it in the tray, and cover it with plastic bags and a piece of cloth and leave it for an hour, until it rests and ferments.
  • We put the oven at a temperature between 170 to 180 degrees Celsius, and put the tray in it for 20 minutes, to be monitored from time to time.
  • Leave the maamoul to cool completely, and decorate with powdered sugar.

Maamoul with flour

  • kilogram of flour.
  • 100 grams of ghee.
  • A teaspoon of baking powder.
  • 100 grams of oil.
  • A cup of anise and fennel.
  • Two tablespoons of powdered milk.
  • A teaspoon of cake seasoning.

How to prepare

  • Put the flour in a bowl, then put the cake seasoning, baking powder and powdered milk on it and mix it well, then add the oil and ghee to it and mix it well.
  • Put the anise with water on the fire until it boils.
  • Gradually add the warm anise to the flour and start kneading it well until we have a cohesive and soft dough.
  • Cut the dough into medium-sized pieces.
  • We start by stuffing the dough with the filling we want (a dough, pistachio, walnut), and we shape it either by scraping with our hands or by using special maamoul molds.
  • Put the maamoul pieces on a tray.
  • Put the oven at a temperature between 170 to 180 degrees Celsius, and put the tray in it for 20 minutes, to be monitored from time to time until its color turns golden.
  • Leave the maamoul to cool completely, and decorate with powdered sugar.
