Makdous is one of the very popular dishes in the Levant, and the city of Aleppo is the city that invented the makdous, and it is usually served with breakfast.

How to prepare the stacked

  • 20 cloves of garlic.
  • 500 g of sweet red pepper.
  • 2 and a half kilograms of small size eggplant.
  • Half a tablespoon of coarse salt.
  • Half a tablespoon of fine salt.
  • A liter and a quarter of olive oil.
  • 100 g of walnuts.
  • 500 g of hot red pepper.

To decorate:

  • A piece of tomato.
  • Sweat of dill.

How to prepare

  • Wash the eggplant well without removing the top.
  • Put the eggplant in a pot, cover it with water, and cover the face of the pot with a clean white cloth.
  • We raise the pot on the fire and leave it on the fire until it boils, then reduce the heat and leave it for five minutes, then remove it from the heat.
  • Drain the eggplant from the hot water, then wash it, put it in a colander and leave it to drain from the water for a whole day.
  • Then sprinkle the eggplant grains with fine salt, slit each eggplant from the middle and let it drain from the water another day.
  • While preparing the filling, peel and mash the garlic, coarsely chop the walnuts and add them to the garlic.
  • Wash and finely chop the hot pepper and bell pepper, add the walnuts, garlic and add the coarse salt.
  • Stuff the eggplant with walnuts and garlic and arrange them in the jar, then turn the jar on a wide tray and leave the eggplant to drain one last time from the water for two days.
  • After that, we put the oil in the jar until it submerges the pills, and we close the jar without closing it tightly and leave it in a dark place for five days.
  • After that we open the jar and it is ready to be served and put the Makdous beads in the dish and decorate the dish with tomatoes and dill veins after washing.


  • It is better to choose small eggplants for the preparation of Makdous.
  • Put the white cloth to absorb the foam while boiling.
  • After removing the eggplant from the boiling water, wash it with cold water so that it does not change color.
  • To peel tomatoes easily: put them in the freezer until they harden, then put them under running water.
  • To make it easier to peel garlic, press it with a knife from the flat side, then remove the peel.
  • To avoid burning hot peppers on the hands, brush them with a little oil before slicing, or wear hand-sized gloves.
