How to prepare chicken stuffed with vegetables

the ingredients

  • Two medium-sized chickens, the weight of the chicken is 1300 g.
  • Half a cup of water.
  • 12 medium-sized carrots, each weighing 60 g.
  • 400g of frozen peas.
  • 6 medium-sized heads of onions, weighing 120 g.
  • A teaspoon of black pepper.
  • 8 molars of garlic.
  • A cup of olive oil.
  • 6 medium-sized lemons, weighing 120 g.
  • Two tablespoons of mixed spices.
  • 6 medium-sized potatoes, each weighing 220 g.
  • 8 pods of hot pepper.
  • Two teaspoons of salt.

How to prepare

  • Peel and finely chop the onion, wash the hot pepper and cut 4 pods of hot pepper for rings.
  • Peel the carrots, wash them, and then cut them into cubes.
  • We wash and clean the chicken, and remove the fat.
  • Season the chicken with a spoon of each of the spices, salt and black pepper.
  • Put in a deep bowl hot pepper and carrots.
  • Peel the garlic and add 4 molars of it to the previous ingredients, add half the amount of peas and season with salt, black pepper and the remaining spices.
  • Wash the lemon and cut it into quarters, then rub the chicken with four pieces of it.
  • Put half a cup of olive oil in a saucepan on the stove, then add the vegetable mixture to the oil and stir until the vegetables are wilted and cooked.
  • Remove the mixture from the heat and leave it to cool slightly.
  • Meanwhile, peel the potatoes and cut them into cubes, as well as chop the remaining carrots and hot pepper.
  • Stuff the chicken with the vegetable mixture after it cools down and sew each chicken from the bottom.
  • Preheat the oven to 200°C.
  • Put the carrots, potatoes, onions, lemon squares and the remaining peas and stir well, then put them in an oven tray and place the stuffed chicken on top.
  • Add olive oil and water, cover the tray with tin and put it in the oven.
  • We leave the tray in the oven for an hour to an hour and a half until the chicken is cooked, and we can test its maturity by using a knife and inserting it into the chicken breast.
  • Remove the tray from the oven, brown its surface, and place it on a serving plate.


  • To keep vegetables in the fridge drawer for a longer period, we put paper towels under them.
  • To clean vegetables, we avoid washing them with soap and water, so as not to stick to them, changing their taste.
  • To keep the vegetables fresh, we wash them, then dry them from the water, cover them with tissues, and put them in nylon bags.
