How to prepare

How to prepare

  • Put three cups of flour, sugar, instant yeast, oil, salt, yogurt and milk in the bowl of the electric mixer, then run it on a moderate speed until we have a dough, and it separates from the sides of the bowl.
  • Add the remaining amount of flour if the dough is soft, and run the mixer on a low speed for five minutes, until we have a soft and elastic dough.
  • Put the dough in a bowl greased with a small amount of oil, then wipe the surface of the dough with a small amount of oil, cover the bowl with nylon, and leave the dough to ferment for an hour in a warm place, until it doubles in size.
  • Prepare the filling: put cheese, mint, and olive oil in a hollow dish, then crumble the cheese with a fork, and stir it with the mint and oil until the ingredients are well mixed.
  • Prepare the packaging: mix the liquid milk and eggs in a small bowl, stir the ingredients using a fork until they are homogeneous, and prepare a small brush.
  • Put the dough on a surface sprinkled with a small amount of flour, stretch it to become thick, then cut the dough using a round biscuit cutter in the form of discs or circles.
  • We put half a tablespoon of the filling on the edges of the circles, then bend the second side over the filling, and press the edges well so that it sticks and does not come out of the filling when baked.
  • Put the pancakes in a tray with short edges, taking into account leaving a distance of two inches between each pancake and another, then let the pancakes rest for ten minutes.
  • Heat the oven to a temperature of two hundred degrees Celsius.
  • Brush the face of the pies with the wrapping mixture, then sprinkle the face with nigella.
  • Bake the pies for a quarter of an hour, until golden.
  • We take out the pies from the oven, then put them on a clean cotton kitchen towel for a few minutes, then serve them on a serving plate with a cup of tea.
