Jalash is one of the types of dough that people use in preparing many types of foods, and sweets in particular, and it is widespread in many Arab countries, especially in the Levant, where it is prepared with many recipes and stuffed with many fillings, and it is very tasty and popular with people, being thin and becoming It is crunchy after baking, in addition to its lightness on the stomach, and the deliciousness of the fillings that are stuffed with it, and it is frequently served on occasions and family banquets.

the ingredients

  • Half a kilogram of Algelash dough.
  • Half a cup of vegetable ghee.
  • Half a cup of milk.
  • Two eggs.
  • A teaspoon of vanilla.
  • Four tablespoons of pudding.

for drip:

  • a cup of sugar.
  • Half a cup of water.
  • A tablespoon of lemon juice.

How to prepare


  • Take a rectangular tray, then grease it with ghee.
  • Put half of the gulash chips in the tray, brushing each chip with vegetable ghee.

Custard pudding:

  • We put four tablespoons of custard in a deep saucepan, then add milk and sugar to it, stir the ingredients well, then raise the pot over the fire, and leave the ingredients on a low heat until they are homogeneous.
  • Remove the pot from the heat, let it cool down a bit, and pour it into a deep bowl.
  • Spread the custard pudding on the custard sheets, then put the remaining amount of the chips on the custard layer.
  • Cut the goulash with the knife, in the form of medium-sized rectangles.
  • Put the eggs, vanilla, and milk in a deep bowl, then mix the ingredients well, and pour the mixture over the glaze.
  • Grease the face of Algelash with a little ghee.
  • We turn on the oven at 180 degrees Celsius, then insert the goulash tray into it, and leave it until it turns red, with observation from time to time.

Diameter preparation:

  • We prepare a deep saucepan, then put a cup of sugar in it, half a cup of water, and lemon juice.
  • Stir the ingredients well until the sugar is completely dissolved, then leave it to boil over a low heat.
  • The syrup becomes heavy, so we remove it from the heat, then pour it into a deep bowl until it cools.
  • The goulash is golden brown and we take it out of the oven, then pour the cold syrup on it.
  • We put Algelash in a serving dish, along with a cup of coffee.


  • Avoid placing the goulash at a very high temperature from the oven, so that it does not burn before it is cooked, as the goulash chips are thin and cannot tolerate high heat.
  • Do not add too much fat to grease the wafers, so that their flavor does not change.
