How to prepare

Prepare the filling:

  • Boil chopped spinach and squeeze it from the water with your hands, or sprinkle it with salt and rub it well instead of boiling it.

Dough preparation:

  • Add salt, onion, hot sauce, sumac, olive oil and lemon zest to the spinach, and mix well.
  • Roll the dough well, and cut it into circles according to the desired size.
  • Put the amount of filling in the middle of the dough, then close it to become a triangle, put a small amount of oil in an oven tray, and stack the pies in the tray.
  • Bake the pies in a hot oven until browned, then remove them from the tray, put them on blotting paper until they absorb the oil, and place them on a serving plate.
  • Prepare the dough by mixing flour, sugar, salt, water and oil together, and kneading well to get a cohesive and homogeneous dough.

  • Half a kilogram of chopped spinach.
  • Half a teaspoon of salt.
  • A large onion, chopped.
  • Quarter of a teaspoon of chili.
  • Three tablespoons of olive oil.
  • quarter cup of lemon juice.
  • ¼ teaspoon of black pepper.

How to prepare

Dough preparation:

  • Put two cups of flour, salt, milk, yeast, egg and oil in the bowl of the electric mixer, and put the dough hook in the mixer bowl and stir well until the mixture becomes like crumbled bread.
  • Add water and knead well until the dough becomes smooth, and add more flour – as needed.
  • Cut the dough into small balls, put them in a tray greased with oil, wipe the dough balls with oil, cover and leave in a warm place for a quarter to a third of an hour.

Prepare the filling:

  • Put the spinach in a saucepan, and raise it over a medium heat with stirring until it wilts, then filter it well and put it in a bowl, then add the oil, onion, sumac, lemon juice, pepper, salt and chili to it.
  • Put the oven at a temperature of 190 degrees Celsius, and bring a tray short edge and wide.
  • Roll out the dough in the form of a medium-sized circle, put a tablespoon of filling in the middle of the dough and close it in the form of a triangle, put the discs spaced apart, cover and leave for a quarter of an hour to rest.
  • Bake the disks in the oven for twelve minutes to a quarter of an hour, until golden.
