How to prepare Iraqi harissa

the ingredients

  • Two cups of fine semolina.
  • One and a half cups of soft white coconut flakes.
  • Two cups of white coarse sugar.
  • Two cups of dry milk.
  • Two tablespoons of baking powder.
  • One and a half teaspoons of liquid vanilla extract.
  • A cup of curd.
  • Two cups of vegetable oil, preferably corn oil.
  • a glass of water at room temperature.
  • An amount of almonds for decoration, and it is indicated that it is possible to replace almonds with any other type of nuts according to taste and desire.
  • Two cups of cold syrup.
  • A quantity of tahini to grease the Chinese.

  • Cinnamon stick.
  • A teaspoon of lemon juice.

How to prepare

  • To prepare the harissa:
  • Grease an oven tray with a little tahini, taking care to cover it from the sides and sides.
  • Prepare the dough, by mixing all the dry ingredients together in a deep saucepan, which includes: fine semolina, sugar, dry milk, in addition to shredded coconut and baking powder.
  • Stir the ingredients with a fork until well combined.
  • Add the amount of vegetable oil and liquid vanilla to the dry ingredients, and mix them well.
  • Mix the amount of yoghurt with the amount of water well in a deep dish, then add the mixture to the harissa mixture, and stir all ingredients using a wooden spoon until you get a cohesive and homogeneous dough.
  • Pour the resulting dough into the tray greased with tahini, and spread it evenly in all corners, taking care to level its surface from the top.
  • Cut the dough into equal-sized squares while it is still raw, then distribute the almonds by stacking one bean in each resulting square.
  • Bring the tray into the preheated oven at a medium temperature for between half an hour to forty-five minutes, until it is fully cooked and becomes golden on the surface.
  • Sprinkle the harissa while it is hot with cold syrup, and leave it aside until it absorbs it well and cools before serving it.
  • To prepare the syrup:
  • Pour the amount of sugar into a deep saucepan.
  • Add water to the sugar, and put the pot on a low heat until it begins to boil.
  • Add the cinnamon stick and lemon juice, in addition to the juice, then leave it for four minutes.
  • Remove the pot from the heat and leave it aside until use.
