How to prepare:

  • Put a liter of water in a large saucepan over a low heat, then add sugar to it, stir and leave it for twenty minutes on the fire.
  • Remove the pot from the heat and leave it aside to cool, then add to it: a slice of bread and yeast, cover the pot and leave it in a warm place.
  • Leave the pot for three days in a warm place, then distribute it in two bottles.
  • Distribute the grapes between the two bottles, cover them tightly, and leave them at room temperature for fourteen days until the flavor absorbs.
  • Filter the vinegar from the solids and keep it in bottles until it is used.

Making grape vinegar with chickpeas

  • A tablespoon each of: chickpeas, bulgur or wheat grains.
  • Three teaspoons of salt.

How to prepare:

  • Wash the grapes well with water and drain, then put them in a large bowl.
  • Add water to the grapes until they are completely submerged, then add the chickpeas and bulgur to it, and cover the bowl tightly.
  • Store the grape container in a cool and dry place for twenty days, moving it from time to time in the first days.
  • Drain the bowl of grapes and transfer them to a smaller glass bowl. Take two handfuls of grapes and mash them to add their juice to the liquid in the small bowl.
  • Add salt to the liquid and stir it, then cover it tightly for fifty to sixty days.
  • Filter the liquid through a cotton swab, and transfer the liquid into a bottle with a wide opening.

Cold Tomato Beetroot Soup with Grape Vinegar

  • A hollow green pepper, chopped.
  • Five hundred grams of each: peeled boiled beetroot, cut into small pieces, and tomatoes cut in half.
  • Four medium tablespoons of olive oil.
  • Three medium tablespoons of grape vinegar.
  • One large cucumber, sliced ​​and peeled.
  • pinch of salt.
  • A clove of crushed garlic.
  • A teaspoon of onion, chopped small.
  • Two tablespoons of Tabasco sauce – optional.

How to prepare:

  • Puree all vegetables in a food processor until the mixture becomes smooth, then filter it through a fine strainer to ensure its smoothness while pressing it.
  • Season the soup with: black pepper, salt, oil and grape vinegar, then keep it in the refrigerator for several hours until it cools.
  • Sprinkle an amount of olive oil and Tabasco sauce on top of the soup before serving.
