  • Half a kilogram of washed and drained Egyptian rice.

  • Six cloves of garlic.
  • Half a cup of coriander.
  • Half a cup of dill.
  • Half a cup of parsley.
  • Half a tablespoon of chili, or as desired.
  • A tablespoon of black pepper.
  • A tablespoon of table salt.
  • A tablespoon of cumin.

Sauce ingredients

  • A tablespoon of vegetable ghee.
  • A tablespoon of tomato sauce.
  • A piece of onion.
  • Four cloves of garlic.
  • Half a cup of tomato juice.

How to prepare

  • Mince the meat, rice, dill, coriander, garlic, onions, parsley and all spices together in a kibbeh mill and grind them well to get a smooth, cohesive and homogeneous paste.
  • Put the meat dough in the refrigerator for thirty minutes, then form it in the form of longitudinal fingers.
  • Fry the meat fingers in a frying pan filled with vegetable oil.
  • To prepare the sauce: we bring a frying pan and put it on the fire, put a spoonful of ghee, chopped onions and three cloves of garlic and fry them, stirring well, then pour them tomato juice with constant stirring, then pour half a liter of meat soup and let the mixture boil.
  • Put the fried meat fingers in the mixture when it boils, and leave the mixture on the fire until the kofta is cooked.
  • After maturity, we pour the Egyptian rice kofta plate into a serving dish and serve it hot with a plate of pickles, olives, a plate of salad, and bread.

Potato kofta with minced meat

the ingredients

  • an egg.
  • An ounce of shredded meat on the fire is half cooked.
  • Half a kilogram of boiled and mashed potatoes.
  • A quarter of a tablespoon of table salt.
  • A quarter of a cup of rusk.
  • A tablespoon of chopped dill.
  • Quarter of a teaspoon of white pepper.
  • Quarter of a teaspoon of nutmeg.

How to prepare

  • We bring a large and deep bowl, put potatoes, eggs, white pepper, rusk, dill, nutmeg and table salt in it, and mix the ingredients together until we have a cohesive dough.
  • We bring a little vegetable oil to wet our hands, then take a ball-shaped piece of the potato mixture and make a hole in it with the finger of the hand, and then put a spoonful of half-cooked meat, close it well, then dip it in the beaten egg and then dip it in the breadcrumbs.
  • We bring a saucepan and put it on the high heat and pour the vegetable oil in it, and after the oil heats up well, put the potatoes stuffed with meat and fry until it turns golden red.
  • Arrange the potatoes stuffed with meat in a serving dish, and serve it with toasted bread, and a plate of green salad.
