the ingredients:

  • Three hundred grams of hard carob pods.
  • Six glasses of water.
  • Three tablespoons of sugar.

How to prepare:

  • Cracking the carob pods, removing their seeds and grinding them with a food processor.
  • Add the ground carob in a quantity of water and soak it for at least 12 hours.
  • Put the carob and water in a pot on the fire, and leave it until it reaches the boiling point, for at least twenty minutes.
  • Filter the carob juice in the jug for this, and then add the amount of sugar to it, taking into account the constant and good stirring, and leave it for some time to cool.
  • Put the jug in the refrigerator, so that the juice turns into a cold and iced drink.

Carob juice with rose water

the ingredients:

  • A cup and a half of carob.
  • A cup and a half of sugar.
  • A liter and a half of water.
  • A teaspoon of rose water.

How to prepare:

  • Prepare a bowl of suitable size, and add an amount of sugar with the carob inside.
  • Stir the sugar and carob well, until it turns caramel color.
  • Add the amount of water in a quiet way, taking into account that the fire is quiet under the pot.
  • Leave it on a medium heat, until its color changes to a dark brown color.
  • Remove the pot from the fire after half an hour.
  • Leave it for some time until it reaches the required cold.
  • Add rose water or licorice, as desired.
  • Put it in the refrigerator and leave it for some time, until it turns into a cold and iced juice.
