Bukhari rice with meat
- A teaspoon of saffron.
- Two tablespoons of rose water.
- Four cups of basmati rice.
- A piece of shredded lamb leg.
- Two large onions, sliced.
- Ten cloves of garlic, cut in half.
- A teaspoon of cardamom is correct.

How to prepare
- Put the saffron in a small dish, add the rose water, and set it aside.
- Wash the rice with water several times until the water becomes clear, then put it in a dish and cover it with water, add a tablespoon of salt and set it aside.
- Put the meat in a wide pot and cover it with water, then put the pot on a strong fire until it boils and foam forms on the surface of the water, where we get rid of the foam.
- Add the onions, garlic halves, cardamom, cumin, cloves, ginger, bay leaf and cinnamon, then let the pot cook over medium heat until the meat is cooked and a little broth remains.
- We drain the meat, and reserve the broth after we drain it.
- Put two liters of water in a deep saucepan, and leave it to boil over a strong heat.
- Strain the rice, then add it to the pot, and boil the rice for a few minutes only, then drain it directly.
- In the lower pot of the steamer, we put the meat, broth, tomatoes, peppers, onions and carrots, then we install the upper pot of the pot, put the rice and sprinkle the saffron and rose water mixture on it.
- Cover the pot with a piece of aluminum, and leave it on a low heat until the rice is completely cooked.
- Pour the rice into the serving dish, spread the meat and vegetables over it, sprinkle the nuts and fried onions, and serve it with daqoos.
- We prepare the daqoos, put the garlic, tomatoes, and hot peppers in a blender and mix them well, then pour the mixture into a thick-bottomed saucepan over a medium heat until it boils, and you have a thick sauce with constant stirring.
Bukhari rice with chicken
- Two cups of washed and drained rice.
- Chicken cut into four pieces.
- pinch of salt.
- Pinch of black pepper.
- Cinnamon stick.
- A teaspoon of ground cinnamon.
- Four grains of cardamom.
- Five grains of cloves.
- Two laurel leaves.
- Two finely chopped onions.
- A clove of finely chopped garlic.
- Two cups of water.
- Two tablespoons of unsalted butter.
- A tablespoon of corn oil.
- Seven grated carrots.
How to prepare
- Put the butter in a saucepan over a medium heat with the oil.
- Add the chicken pieces and stir until browned and half cooked, then remove the chicken and set it aside.
- Put the onions and garlic in the pot, and saute them until they change color.
- Add the carrots, cardamom, bay leaf, cinnamon stick, cloves and ground cinnamon.
- Return the chicken to the pot, then pour the water and leave the mixture on a low heat until the chicken is cooked through.
- Put the rice and flavor it with salt and pepper.
- Stir the ingredients and leave them on a low heat until the rice is cooked.
