Lupine is a type of legume, and its shape is small in size like a ball, and its shape before the process of washing is small, but after it matures, its shape is larger and grows in the Arab world. Lupine is one of the legumes that contains an excellent proportion of protein, carbohydrates, and oils. Lupine grows most in the Levant and in Egypt as well.

Bitter lupine

  • We wash the lupine well in the water, and take out any impurities present in it, while working to put the lupine on the fire in a saucepan, and the first thing that begins to boil after placing it for five minutes, we remove it from the fire.
  • We change the lupine water constantly while working to put it in the water for a day and a half until the lupine opens, grows in size, and changes color.
  • We continue to change the water on it for 4 or 6 times a day, until it matures, and after at least three days have passed, then we taste the lupine, is it bitter or has it become sweet, then put salt and anise and eat it.

How to prepare

  • We bring a kilo of lupine with the work of purifying it from the grains and impurities inside it, with the lupine soaking for 8 hours until it changes color, opens, and the soaking water is changed, and we notice the change in the size of the thrips so that it becomes twice the size.
  • We put the thermos on the fire with a large amount of water, leave it to boil for five minutes, and then remove it from the fire, and continue to wash the thermos until it cools, after which it is left for five days and the continuous change of water is done periodically while working on salt, cumin, pepper , and lemon juice.

How to prepare

  • We wash the beans and soak them for 24 hours in water, and the next day we drain the beans from the water and place a wet white cloth on the beans.
  • We change the cloth and wet it with water four to five times a day until the beans open and sprout for two days.
  • Boil the beans on the fire until it boils, then drain the beans from the water.
  • We bring a tray or an oven tray and put the beans in it, provided that the beans are (sprouted) and the beans are equal in the saj until they are well cooked.
  • Put the beans in the oven until the beans are browned for twenty minutes.
  • We bring the water, cumin, lemon, salt and pepper seasoning and put the beans in it, and put them in an airtight container for two full days until they absorb and become soft again.

salted chickpeas

  • A kilogram of chickpeas.
  • A teaspoon of sodium carbonate.
  • Four liters of water.
  • A sprinkle of cumin.
  • Pinch of salt.

How to prepare

  • Soak the chickpeas in a bowl of water for a day, and add a teaspoon of sodium carbonate to it.
  • Put the soaked chickpeas in the pot, add water to it, and boil for at least an hour, until it is cooked, and a few minutes before maturity, add a pinch of salt.
  • We drain the chickpeas from the water after maturity through the strainer, with the remaining amount of boiling water inside the container in which the boiled chickpeas are.
  • Put a quantity of boiled chickpeas in a serving dish and add a pinch of cumin and a pinch of salt.
