  • A cup and a quarter of all-purpose flour.

  • Eight hundred grams of strawberries, divided into halves.
  • A third of a cup of apricot jam.

Cream Ingredients:

  • Yolks of five large eggs, at room temperature.
  • Three quarters of a cup of sugar.
  • Three tablespoons of starch.
  • One and a half cups of milk.
  • Half a teaspoon of vanilla extract.
  • A tablespoon of unsalted butter.
  • A tablespoon of heavy cream.

How to prepare

  • Mix the flour, sugar and salt in a small bowl and refrigerate for 30 minutes.
  • Transfer the dry ingredient mixture to the bowl of a food processor, then add the butter and shortening and mix 10 times or until a lumpy mixture forms.
  • Add cold water and mix until a paste forms.
  • Transfer the dough to a floured surface and assemble it into a disk, then wrap it in cling film and refrigerate for at least 30 minutes.
  • Prepare the oven by operating it at a temperature of 190 degrees Celsius.
  • Roll out the dough and put it in four tart molds and dispose of the excess edges, then put a layer of aluminum foil greased with butter in each mold and fill it with dry cereal and bake in the oven for 20 minutes or until golden, then leave it aside to cool.
  • Fill the molds with sweet cream and decorate them with strawberries, then melt the jam with a teaspoon of water and spread the mixture over the strawberries, and sprinkle the tart with pistachios if used.

Cream preparation:

  • Beat the egg yolks with sugar in an electric mixer at medium speed for 4 minutes, then reduce the speed and add starch.
  • Slowly add the hot milk and pour the mixture into a small saucepan and leave it on low heat for 5 to 7 minutes until it thickens, stirring it with a wooden spoon.
  • Continuous mixing for two minutes until a mixture of custard texture is formed.
  • Add the vanilla, butter and heavy cream, filter the mixture through a strainer and refrigerate until firm.

  • Half a cup of peach jelly.
  • 1 tablespoon of frozen concentrated orange juice.

How to prepare

  • Prepare the oven by operating it at a temperature of 190 degrees Celsius.
  • Prepare the molds by mixing flour with butter and sour cream in a food processor until a dough forms, then stack it in a medium-sized tart mold and bake in the oven for 15 minutes until frozen without browning.
  • Reduce the oven temperature to 175°C.
  • Fill the mold with peach slices until completely covered.
