How to prepare ricotta cake
Preheat oven to 350 degrees, spread parchment paper on an oven tray and set aside.
In a medium bowl, mix the flour, baking powder and salt together and set aside.
With the help of an electric mixer, mix the sugar, butter and lemon peel until the mixture becomes homogeneous.
Add eggs one by one while still mixing, then add vanilla.
Add half of the flour mixture and mix until homogeneous, then add ricotta and mix again.
Add the last half of the flour mixture and mix until homogeneous.
Pour the mixture into the tray and bake in the oven for about 45-50 minutes, until the cake is done.
