Mashkhool rice

Mashkhoul rice is one of the traditional and popular dishes that Kuwaiti and Gulf cuisines are famous for in general.

Mashkhool is usually prepared using different types of red meat, chicken, or fish of all kinds, especially tuna. This recipe is famous for its various spices and Gulf spices. Mashkhool can be prepared with some additions of various vegetables such as peas, peppers, onions, potatoes and others.

Chicken Mashkhool Rice

Rice Ingredients:

  • Five cups of basmati rice.
  • Ten glasses of water.
  • Two teaspoons of vegetable oil.
  • A tablespoon of coarse salt.

Filling Ingredients:

  • Three heads of onions cut into thin slices.
  • A tomato cut into cubes.
  • Two grated carrots.
  • One grated each of: red pepper, green pepper.
  • Half a tablespoon of each: turmeric, dry red pepper, black pepper, mixed spices, and crushed garlic.
  • Quarter of a teaspoon of dry coriander.
  • 1 tablespoon of fine white pepper.
  • Four tablespoons of vegetable oil.
  • Two tablespoons of tomato puree.

Chicken Ingredients:

  • Whole chicken.
  • Half a tablespoon of crushed garlic.
  • quarter cup of lemon juice.
  • A quarter of a tablespoon of each: cumin, ground black pepper, hot red pepper, and finely chopped coriander.

How to prepare

Chicken preparation:

  • Wash the chicken well with water and lemon, then get rid of its excess, then cut it lengthwise.
  • Add to the chicken pieces: mashed garlic, lemon juice, cumin, black pepper, red pepper, and coriander.
  • Leave the chicken marinated in the spices for at least fifteen minutes.
  • Grease the oven tray with a small amount of oil, and put the chicken pieces in it.
  • Pour the oil on the face, cover the tray with a piece of tin foil, and put it in a preheated oven for at least half an hour.
  • Remove the tin foil from the chicken until its face turns red, then turn it over and brown it on the other side.

Rice preparation:

  • Soak the rice in an appropriate amount of hot water for fifteen minutes.
  • Pour the oil into the bottom of a saucepan and heat it up a little.
  • Put the rice soaked with salt in the pot and stir.
  • Pour the amount of water over the ingredients, and leave it on a medium heat until the rice is cooked and set it aside.

Prepare the filling:

  • Pour the oil into a saucepan, and leave it on a medium heat until hot.
  • Add the onions, garlic and stir constantly until they are soft and golden.
  • Put the tomatoes, green and red peppers, carrots, and tomato puree.
  • We flavor the mixture with turmeric, red pepper, black pepper, mixed spices, coriander and white pepper.
  • Stir the ingredients together, and leave them on a low heat for no more than ten minutes.
  • Add the boiled rice, and leave the mixture on a low heat for an additional quarter of an hour.
  • Pour the rice into a serving dish, and place the fried chicken pieces on top of it.
